Take two cups of rice
4 large chicken breasts cut into 1/2 inch chunks
1 cup baby carrots
1/4 cup baby corn
2 broccoli stalks cut up
half a small cauliflower cut up
1 cup green beans
1 cup vegetable cooking oil
2 cups of water
Currie
Cook Currie in oil over low heat for about 10 minutes.
Then add precut chicken.
When chicken is cooked, drain, add the water, add more Currie and simmer until it starts to thicken up.
Put ALL your veggies in a steamer and start to steam them.
Make the rice.
You will want to flavour the chicken to your liking with the Currie. However you will also need to have a Currie sauce so don't let the curried chicken simmer dry.
When everything is cooked, put the rice down on a plater.
Add the vegetables to the top of the rice. Add the curried chicken along with the sauce.
Feeds me and the wife for two meals plus we snack on it.
Enjoy !!
