Texas Beef Skillet

Ingredients
1 1/2 lbs. lean ground beef
1 can diced tomatoes, undrained plus 1 can water
1 can kidney beans (or pinto beans), drained
1 cup bell pepper, chopped
1 small onion, chopped
3/4 cup long grain rice
1 tsp. garlic salt
1 tsp. pepper
1 Tbsp. chili powder
3 Tbsp. cooking oil
3/4 cup grated cheddar cheese
1 cup loosely crushed tortilla chips or corn chips
Preparation
Heat oil in large skillet.
Sauté bell pepper and onion about 5 minutes until slightly tender.
(Don't overcook; leave slightly crisp.) Remove veggies and set aside.
Add ground beef and brown. Drain off juice.
Add tender-crisp bell pepper and onion; stir to combine.
Add diced tomatoes with juice plus one can of water. Add drained beans.
Add garlic salt, pepper, and chili powder.
(Also add a dash of cayenne pepper for a little zing!)
Combine and bring to just boiling. Add rice.
Reduce heat, cover and simmer about 20 minutes or until rice is tender.
Put grated cheddar cheese on top and continue heating until cheese is melted.
Top with loosely crushed chips and serve
