A friend of ours is getting married next week. We were all at the company Christmas party together on Sunday and his fiancee asked me (still can't figure that one! ME?) if I had a recipe for the apple stuffing they were serving at the party. She said she'd like the recipe as a wedding gift. :) Does anyone know a recipe for it? My lovely husband turned to her and said "Sure, stove top with apples". What dork! Even I knew that! :)

I've never heard of it either. Sorry. I'll look through some of my cookbooks, if there's a recipe for stuffing with apples in it, I'll be sure to post it.

Estimated Times: Est. preparation time: 10 mins
Est. cooking time: 40 mins
Ingredients
1/2 cup butter or margarine
1 cup sliced celery
1/2 cup chopped onion
1 cup water
3 cubes chicken bouillon
1 cup apple juice
14 ounces stuffing mix
2 cups peeled, cored and chopped apples
1 cup chopped walnuts
Directions
Heat butter in a large skillet; add celery and onion and sauté until tender. Add water and bouillon. Stir until bouillon is dissolved; set aside.
In a large bowl, combine juice, stuffing mix, apples, and walnuts. Add celery mixture; toss to mix well. Place stuffing in a baking dish and bake at 350°F for 30 minutes or until top is browned.
Servings: 8

Ingredients
1 pound sausage
15 ounces stuffing mix
4 onions
6 celery ribs
1 eggs
8 ounces cranberry sauce
1 1/2 cups apple juice
Directions
Cook sausage in a skillet over medium heat until browned; drain.
In a large bowl, mix the cooked sausage with stuffing mix, chopped onions, celery ribs, eggs, and cranberry sauce. Add apple juice, a little at a time, until the entire mixture is dampened, but not mushy. Bake in a covered baking dish for 30 minutes at 350 degrees.

Ingredients
1 1/2 cups brown rice, uncooked
3 1/2 cups apple juice, divided
1 apple, diced
1/2 cup onion, chopped
1/2 cup celery, sliced
1/3 cup SUN-MAID® Raisins
1/2 teaspoon poultry seasoning
1/4 teaspoon thyme
1/4 teaspoon pepper
2 teaspoons margarine
1/3 cup bran
1/3 cup slivered almonds
Directions
Prepare rice according to package directions, using 3 1/4 cup apple juice for the liquid.
Cook diced apple, chopped onion, sliced celery, raisins, poultry seasoning, thyme, and pepper in margarine in a large skillet until the vegetables are tender-crisp. Stir in the cooked brown rice, bran, slivered almonds, and remaining apple juice.
Use as stuffing for poultry or pork roast, or bake at 350 degrees for 35 minutes.

4. Apple, Apricot and Walnut Stuffing
A full-flavored stuffing that's accented with plump raisins and dried apricots, toasted walnuts and tender, sautéed apples. A wonderful side for chicken, turkey, duck or pork.
Estimated Times: Est. preparation time: 20 mins
Est. cooking time: 1 hr, 45 mins
Ingredients
10 slices of white bread (crusts removed, if desired), cut into 1/2-inch cubes
1 cup walnuts
1 cup chopped dried apricots
1/2 cup apple cider
1/4 cup SUN-MAID® Raisins
6 tablespoons LAND O LAKES® Butter
2 1/2 cups chopped, cored apples
1 onion, peeled and chopped
1 cup chopped celery
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon dried thyme
1/4 teaspoon crushed dried sage
1/8 teaspoon ground cloves
1/2 cup chicken broth, divided
Directions
Preheat oven to 275°F.
Place bread cubes in a single layer on large, shallow baking sheets. Bake, stirring frequently, until crisp and dry, about 1 hour (depending on moisture in bread). Cool, transfer to a large bowl and set aside.
Increase heat to 350°F.
Place walnuts on a baking sheet and toast until lightly browned, about 7 minutes. Cool and coarsely chop; set aside.
Meanwhile, combine apricots, apple cider and raisins in a small saucepan; mix well. Bring to a boil, remove from heat and cover. Let steep for at least 30 minutes, stirring occasionally.
Next, melt butter in a large skillet over medium heat. Add apples, onion, celery, salt and pepper and sauté until tender, but not browned, about 10 minutes. Stir in thyme, sage and cloves and remove from heat.
Combine onion mixture, toasted walnuts, apricot and raisins (including liquid) with the bread cubes and toss lightly. Use as a stuffing for poultry or spoon into a 13x9x2-inch baking dish that's been lightly coated with vegetable cooking spray. Bake, covered, for 15 minutes. Pour half the chicken broth evenly over the top and bake for another 15 minutes. Pour remaining broth on top and bake for 15 minutes longer, removing cover for the last 10 minutes. Serve warm.

Directions
Preheat oven to 350°F.
Place diced cornbread in a large bowl. Set aside.
In a medium skillet over medium heat, cook celery, onion, and parsley in butter. Cook, stirring occasionally, until softened, about 3 to 5 minutes. Stir into the cornbread mixture.
In a bowl, combine eggs, chicken broth, and pepper. Stir into the cornbread mixture. Fold in apples and walnuts.
Bake in a greased baking dish for 25 minutes, or until lightly browned crust forms on top and stuffing is heated all the way through.

5 tablespoons LAND O LAKES® Butter
1 cup onion, peeled and chopped
2 cups soft bread crumbs
2 apples, peeled and chopped
1 cup white wine
1 cup chopped almonds
2 tablespoons lemon juice
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
Directions
Melt butter and sauté onion until translucent, about 5 minutes; add bread crumbs to onions, stirring to combine. Gently stir in apples and white wine; cook for 5 minutes longer. Stir in lemon juice, nutmeg and allspice; mix well.
Stuff into a turkey or bake at 350°F on a buttered and covered baking dish for 30 minutes.

1 onion, chopped
2 tart apples, peeled and coarsely chopped

2 tablespoons LAND O LAKES® Butter
16 ounces stuffing mix
Directions
In a large kettle, heat oil and saute chopped onion until brown and tender. Stir in coarsely chopped, peeled apples and cook over medium heat for about 5 minutes. Stir in water and butter and bring to a boil. Remove from the heat and stir in stuffing mix. Toss to evenly coat.
Use as a traditional turkey stuffing, or bake in a greased baking dish at 325 degrees for 30 minutes.

Directions
Preheat oven to 350 degrees.
In a skillet, saute chopped onions and chopped celery in butter for 3 minutes. Add chopped apples, croutons, dry bread crumbs, sage, poultry seasoning, salt, and pepper. Mix well until evenly combined.
Bake in a baking dish for 30 minutes, or use as a stuffing for a turkey.
